The first time I had to write for Shogun, I was admittedly overwhelmed. It was more than simply writing about food. I had to understand the origins of certain dishes and their cultural impacts through Japanese history. 

This sudden culture shock led me to dive deep and gain a phenomenal understanding of something that was once completely alien to me. At the time of my first writing, I knew nothing about sushi or any other traditional Japanese dishes, but as time went on I let my work influence me as much as I had influenced it. This resulted in me creating pieces that I could be proud of while retaining knowledge to take with me wherever I go.
